If you don't already, it’s wise to have a go-to vinaigrette recipe in your back-pocket. Depending on what else you have on hand and/or what you’re dressing, feel free to get creative. Dijon mustard, herbs, and citrus all make for great additions.
ingredients
1 clove minced or grated garlic
3 tablespoons white wine, champagne, rice, or sherry vinegar
Kosher salt and freshly ground black pepper
1/4 cup good quality extra virgin olive oil
Salad greens for 3 to 4 people
DIRECTIONS
In a small bowl, whisk together the garlic, vinegar, salt and pepper. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Place the salad greens in a medium bowl and add enough dressing to moisten. Serve immediately. Enjoy!
