It's citrus season. Forget the chocolate.
I know, I know... when you think Valentine's Day, lemon pie might not be the first thing that comes to mind. But if you're looking to give a more personal, seasonal holiday treat, then a DIY lemon pie will be perfect for your main squeeze.
CRUST
- 1 1/4 cups all-purpose flour
1/2 teaspoon kosher salt
1 stick chilled unsalted butter, cut into pieces
1 tablespoons apple cider vinegar
Pulse flour and salt in a food processor to combine. Pulse in butter until mixture resembles coarse meal with pieces of butter still visible, about 20 pulses.
Combine vinegar and 1/4 cup ice water in a measuring cup. Pulsing, drizzle in vinegar mixture; pulse until dough just holds together when squeezed (it should still be crumbly), about 10 pulses.
Turn out dough. Place on a sheet of plastic wrap and use plastic to press into disks. Wrap and chill until firm, about 2 hours.
Place a rack in lower third of oven; preheat to 350°. Roll out disk of dough on a lightly floured surface to a 14” round. Transfer to a 9”-diameter pie dish. Lift up edge and let dough slump down into dish. Trim, leaving about 1” overhang. Fold overhang under. Freeze 15 minutes.
Line dough with parchment paper or foil, leaving some overhang. Fill with pie weights or dried beans. Bake until crust is dry around edge, 25–30 minutes. Remove parchment and weights and brush entire crust with egg. Bake until crust is dry and set, 10–15 minutes. Let cool.
FILLING
1 1/4 cups of sugar
1/4 cup flour
1/4 cup cornstarch
2 cups water
Pinch of salt
4 egg yolks
1/2 cup lemon juice
Nob of butter
1/3 cup lemon rind
- Over medium-high heat, combine sugar, flour, cornstarch, water, salt, and egg yolks together in a double boiler.
- Steadily stir all ingredients with whisk, ensuring curd stays smooth as mixture begins to heat through.
- As mixture begins to thicken to a curd-like constancy, add lemon juice, lemon rind, and butter. Continue to whisk steadily until glossy and thick.
- Once crust has cooled, pour curd filling into crust, and let pie set in fridge for 2 hours before enjoying.
