No matter how you cut it, sometimes there's just no substitute for bacon.
And yes, this is coming from someone who generally tries to stick to a plant-based diet and who never (never!) has pork or red meat in the house. As they say, there is an exception to every rule...
Which leads me to one of this week's featured recipes, a very traditional take on peas & pasta. With spring in full swing, peas are everywhere at the market and there's no question peas & pasta has been on my mind. I've cooked up too many variations to count over the past couple weeks, some strictly veggie and some using... bacon. As much as I tried to avoid it, bacon is kind of unavoidable here.* So, for just this once, I'm advocating you bring home the bacon.
